The Bigorre black pig

Pickles made from the Bigorre black pig, an ancestral race brought up to date thanks to the passion of a few breeders, are considered like the best in France.

 

The « garbure »

The garbure is a rustic soup made with cabbage, leeks, turnips, potatoes, carrots, onions, and of course Tarbais beans as well as chunks of duck meat and pork rinds. A main course for winter evenings.

 

The « gâteau à la broche »

This conical shape cake requires hours of preparation. The dough made of eggs, flour, sugar and butter is poured over a wooden mold turned over a fire for several hours.
